A wonderful meal that is a great way to eat all of that yummy zucchini, and bid farewell to summer 馃槮

Garlic Basil Pesto Linguine with Zucchini and Peas

SERVINGS: 3

INGREDIENTS:
1 tablespoon, plus 录 cup Wildtree Roasted Garlic Grapeseed Oil, divided
1 zucchini, sliced
1 cup frozen peas
1/3 cup Wildtree Basil Pesto
2 tablespoons water
6 ounces linguine, cooked according to package directions

PREPARATION:
Heat 1 tablespoon of Garlic Grapeseed Oil in a medium nonstick skillet over medium high heat. Add the zucchini and saut茅 for about 10 minutes, until zucchini is tender and browned. Add the peas and continue cooking until heated through. Meanwhile in a mixing bowl hydrate the Basil Pesto with the water. Whisk in the remaining 录 cup Garlic Grapeseed Oil. Add the prepared pesto to the hot cooked pasta and toss to coat. Add the cooked zucchini and peas and toss to combine. Season with salt and pepper to taste; can be served with fresh grated parmesan cheese.

For those of you who want a meal without meat, try this lovely “burger” using chickpeas!!! Here’s the recipe:

Fajita Chickpea Burgers
Provided by Wildtree Herbs from Warwick, RI
SERVINGS: 4
INGREDIENTS:

6 ounces low-fat plain yogurt
1 tablespoon Wildtree Chipotle Lime Rub
14.5 ounce can chickpeas, rinsed and dried
1 1/2 teaspoons Wildtree Fajita Seasoning
1/4 finely diced red onion
1 egg beaten
1 tablespoon bread crumbs
2 tablespoons chopped parsley
4 hamburger buns
1/3 cup roasted red peppers
1 cup lettuce or spring mix

PREPARATION:

Preheat oven to 350掳F. In a small bowl, combine the yogurt and Wildtree Chipotle Lime Rub; set aside (there will be plenty extra). In a food processor, or medium-sized bowl, puree or mash the chickpeas. Add the Wildtree Fajita Seasoning, red onion, egg, breadcrumbs, and parsley. Portion the mixture into 4 equal burgers and place on a parchment lined or lightly greased sheet pan. Bake for 10-12 minutes, until an internal temperature of 145掳F is reached. Serve burgers on toasted buns with lettuce, roasted red pepper and chipotle sauce.
