Recipe Spotlight – July 9, 2012: Meatless Monday Style!!!

Looker for a quick and easy summer recipe? Try this lovely quesadilla!

Mushroom and Zucchini Quesadillas
Provided by Wildtree Herbs from Warwick, RI
2 tablespoons Wildtree Natural Grapeseed Oil
8 ounces mushrooms, sliced
1 zucchini, thinly sliced
1 tablespoon Wildtree Tzatziki Seasoning Blend
4 (8 inch) flour tortillas
1 cup havarti dill cheese, shredded


In a large sauté pan, heat the Grapeseed Oil over medium high heat. Add the mushrooms, zucchini, and Tzatziki Blend; toss to coat the vegetables. Cook for 5 minutes or until the vegetables have started to turn a golden brown color and are tender; remove from heat. Lay 2 tortillas flat on a working surface. Sprinkle both with the havarti, using ½ cup of cheese total. Dived the vegetable mixture among the 2 cheesed tortillas. Spread in a single layer, top with remaining cheese and then the second tortilla. Cook the quesadillas in the same skillet as the vegetables on both sides until golden brown and cheese and melted.
